Bonus Gremolata: a bag of parsley, a lemon and a garlic bulb. All for £2. To make gremolata, combine 2 tbsp finely chopped parsley, 1 tbsp grated lemon zest and 1 or 2 cloves of garlic (crushed). Sprinkle over vegetables, pasta, pork or lamb.

Something interesting in the orchard: We have eight varieties of apples but one has always been more prone to apple scab than all the others. So this year we enlisted the help of Niall Wildewoode who re-grafted the poor variety’s rootstocks with scions from Red Topaz trees – one of the best we have. This is a clever way of replacing poor varieties without losing the trees all together. Niall can do this kind of work for you if you have a variety of apple that is disappointing.
